For sustainable eaters, plant-based alternatives have come a long way. Burgers, milks, and eggs have all found convincing dupes, but a decent alternative to real cheese has remained elusive. Conventional vegan cheeses often fail to deliver that gooey, stretchy quality that makes traditional mozzarella so satisfying.
Now, Canadian startups are on the verge of commercialization, using cutting-edge tech to create animal-free dairy options that promise to rival the real thing.
The secret behind cheese's unique stretch and melt is casein, a primary protein in cow’s milk. Toronto-based startup AuX Labs has developed a method to produce casein without animals using precision fermentation.
By inserting the genetic code for casein into yeast, the yeast expresses a protein molecularly identical to dairy casein when fermented. When combined with water and fats, it creates an animal-free cheese that performs just like traditional dairy. In taste tests, most consumers couldn't tell the difference.
To scale up efficiently, CEO Ted Jin plans to partner with craft breweries, utilizing their excess fermentation tanks rather than building expensive new facilities. Supported by a recent $4-million funding round, AuX aims to bring its product to market quickly.
While AuX focuses on a single protein, Montreal-based Opalia Foods aims to replicate whole milk using cellular agriculture.
Founded in 2020 by Jennifer Côté and Lucas House, Opalia grows bovine mammary cells inside specialized bioreactors. Once stimulated with lactation hormones, these cells produce real milk. Opalia’s key breakthrough is a proprietary, animal-free growth medium, replacing the expensive and controversial fetal bovine serum traditionally used in cell culture.
Having raised $3.2 million in seed funding, Opalia is scaling up bioreactors and partnering with dairy suppliers to prepare for commercial launches following regulatory approval.
Biotech isn't the only solution. Professor Alejandro Marangoni at the University of Guelph has explored plant-based chemistry to create stretchable cheese using whole legumes like butter beans.

While bio-engineered options match dairy's exact molecular structure, Marangoni emphasizes that cost remains the biggest hurdle for consumer adoption. Bean-based formulations provide a far more economical route to mass production.
Whether derived from microbreweries, bioreactors, or humble legumes, the next generation of alternative dairy focuses on performance and price.
As AuX Labs’ Jin notes, the ultimate test is practical: if animal-free options deliver the same taste and melt at competitive prices, the shift toward sustainable dairy will happen naturally—without requiring consumers to accept a compromise.
